- 2 tbsp fresh oregano, chopped
- 4 garlic cloves, minced
- 1/4 cup red wine vinegar
- 1/3 cup extra virgin olive oil
- Salt and pepper to taste
- 8 large lettuce leaves (romaine or butter)
Instructions
- In a food processor, blend parsley, oregano, garlic, red wine vinegar, and olive oil until chunky. Season with salt and pepper.
- Marinate flank steak in half of the chimichurri sauce for at least 1 hour in the fridge.
- Preheat grill to medium-high heat (400°F). Grill steak for about 5 minutes per side until it reaches desired doneness.
- Let the steak rest for 5 minutes before slicing thinly against the grain.
- Assemble wraps by placing sliced steak in lettuce leaves and drizzling with remaining chimichurri sauce.
