  • 3 lbs beef chuck roast
  • 1 large yellow onion, sliced
  • 4 cups low-sodium beef broth
  • 4 garlic cloves, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 4 hoagie rolls
  • Optional toppings: melted cheese, jalapeños

Instructions

  1. Trim excess fat from the beef chuck roast and season generously with salt and pepper.
  2. Sauté sliced onions in a skillet over medium heat until golden brown (about 5 minutes). Add minced garlic and sauté briefly.
  3. Place the seasoned roast at the bottom of the crockpot, top with sautéed onions and garlic, then pour in beef broth and Worcestershire sauce.
  4. Sprinkle dried thyme and black pepper over the top. Cover the crockpot with a lid.
  5. Cook on low for 8 hours or high for 4 hours until the beef is tender.
  6. Shred the beef using two forks and serve on toasted hoagie rolls with warm au jus for dipping.
