- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil, divided
- Juice of 1 lemon (about 2 tbsp)
- 1 cup full-fat Greek yogurt
- 1/4 cup fresh dill, chopped
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Pat chickpeas dry with paper towels, toss with 1 tbsp olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
- Roast chickpeas for 25-30 minutes until golden and crispy, stirring halfway through.
- Meanwhile, grill zucchini slices on medium-high heat for about 4-5 minutes per side until charred.
- In a bowl, mix Greek yogurt, lemon juice, dill, grated cucumber (squeezed dry), garlic powder (or more if desired), salt, and pepper until smooth.
- To serve, spread tzatziki on plates and top with grilled zucchini and crispy chickpeas.
