  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Prepare the Ingredients: Chop all vegetables and cube the beef.
  2. Brown the Meat: Heat olive oil in a large pot over medium-high heat. Brown beef cubes on all sides (about 5 minutes). Remove and set aside.
  3. Sauté Vegetables: In the same pot, add onions and garlic; sauté until translucent (3-4 minutes). Add carrots and potatoes; stir for another minute.
  4. Add Liquid: Return the browned beef to the pot. Pour in beef broth and stir in tomato paste, thyme, and bay leaves. Bring to a gentle boil.
  5. Simmer: Reduce heat to low, cover tightly, and simmer for about two hours until meat is fork-tender. Stir occasionally.
  6. Serve: Taste and adjust seasoning if necessary. Ladle into bowls and garnish with fresh herbs if desired.
