Ingredients
  

Filling
  • 2 packages frozen spinach thawed, squeezed dry, and chopped
  • 2 stalks scallions sliced fine
  • 2 cloves garlic minced fine or grated
  • 2 Tbsp dill chopped
  • 2 Tbsp parsley chopped
  • ⅔ cup feta crumbled
  • 1 zest lemon from one lemon
  • 1 tsp salt plus more to taste
  • ¼ tsp black pepper freshly ground, plus more to taste
Pastry
  • 1 package frozen puff pastry thawed (2 sheets, 454 grams / approx 16 oz)
  • 1 egg for egg wash whisked
  • Flour for dusting
  • Sesame seeds for sprinkling (optional)

Method
 

Preparation
  1. In a medium bowl, mix together all the filling ingredients and set aside.
  2. Unfold thawed puff pastry sheets and cut the pastry into rounds using a round object.
  3. Roll out one pastry sheet on a flour-dusted work surface and slide onto a parchment-lined baking sheet. Chill while repeating with the second sheet.
  4. Brush egg wash along the circumference of the pastry on the baking sheet and reserve remaining egg wash.
  5. Spread the spinach mixture over the pastry, leaving a ½ inch border. Place the second round of pastry on top and press gently to seal.
  6. Using a small cup, make an indent in the center. Chill for 10-20 minutes.
  7. Once cool, cut pastry into 16 spokes and twist each spoke gently.
  8. Chill in the freezer until cold, about 10-15 minutes.
Baking
  1. Preheat oven to 400°F and place a rack in the middle.
  2. Brush the tart with reserved egg wash and sprinkle with sesame seeds if using.
  3. Bake until risen and browned, about 25-30 minutes.
