Ingredients
  

Burger Patties
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 cup carrots grated
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup bread crumbs preferably whole wheat
  • 1 large egg lightly beaten
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns whole grain or gluten-free
  • 1 cup lettuce washed and dried
  • 1 tomato sliced
  • 1/2 cup pickles sliced
  • 1/4 cup ketchup optional
  • 1/4 cup mustard optional

Method
 

Prepare the Mixture
  1. In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.
  2. Add cooked quinoa, chopped onion, minced garlic, grated carrots, cumin, paprika, bread crumbs, and beaten egg. Mix until well combined.
  3. Season with salt and pepper to taste.
Form Patties
  1. Divide the mixture into 4 equal portions and shape each into a patty.
  2. Place the patties on a baking sheet lined with parchment paper.
Cook the Patties
  1. Heat a skillet over medium heat and add a little oil.
  2. Cook the patties for about 5-7 minutes on each side, or until golden brown.
Assemble the Burgers
  1. Toast the burger buns if desired.
  2. Place a patty on each bun and top with lettuce, tomato, pickles, and any additional condiments.
