Ingredients

For the Sandwich Filling
  • 8 oz cream cheese softened, consider flavored for extra kick
  • 1 medium cucumber thinly sliced, English cucumbers recommended
  • 1 medium bell pepper diced finely, red, yellow, or orange
  • 1 medium carrot grated
  • 2 tbsp fresh dill chopped, can substitute with chives
For the Bread
  • 8 slices white or whole-grain bread soft, gluten-free if needed

Method

Preparation
  1. Wash and finely chop your favorite veggies, such as cucumbers, bell peppers, and radishes.
  2. In a bowl, blend softened cream cheese with herbs like dill or chives for added flavor.
  3. Lay out slices of soft bread on a clean surface. Spread a generous layer of the herbed cream cheese on each slice, then evenly distribute the chopped vegetables over half of them.
  4. Place another slice of bread on top of the vegetables to create a sandwich. Cut each sandwich into quarters or triangles.
  5. For best results, refrigerate the assembled finger sandwiches for about 30 minutes before serving.
