Vegan Irish Colcannon

Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cubed
Greens
  • 2 cups kale chopped
  • 1 cup scallions sliced
Dairy Alternatives
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons vegan butter
Seasoning
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground

Method
 

Prepare the Potatoes
  1. Place the cubed potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 20 minutes.
Cook the Greens
  1. In the last 5 minutes of cooking the potatoes, add the chopped kale to the pot.
Mash and Combine
  1. Drain the potatoes and kale in a colander. Return to the pot and add almond milk, vegan butter, salt, and pepper. Mash until smooth and creamy.
Serve
  1. Transfer to a serving dish and top with sliced scallions. Serve warm.
