Ingredients
  

Fruits
  • 2 cups fresh pineapple, diced can substitute with canned pineapple
  • 1 cup mango, diced
  • 1 cup kiwi, peeled and sliced
Vegetables
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon olive oil
  • 1 teaspoon fresh mint, chopped

Method
 

Prepare the Ingredients
  1. In a mixing bowl, combine the diced pineapple, mango, kiwi, red bell pepper, and cucumber.
Make the Dressing
  1. In a small bowl, whisk together lime juice, honey, olive oil, and chopped mint until well combined.
Combine and Serve
  1. Pour the dressing over the fruit and vegetable mixture and toss gently to coat. Serve immediately.
