  • 2 cups all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 2 cups mixed dried fruit such as raisins, sultanas, or currants
  • 1 teaspoon spices (cinnamon, nutmeg, cloves) mixed
  • 1 teaspoon baking powder
  • 3 large eggs room temperature
For the Glaze
  • 1/2 cup apricot jam
  • 2 tablespoons whiskey optional

Method
 

Preparation
  1. Soak a mix of dried fruits in whisky or rum for at least 4 hours or overnight.
  2. Cream together butter and sugar until fluffy, then add eggs one at a time.
  3. Fold in the soaked fruit, chopped nuts, and spices.
  4. Sift in flour and baking powder, mixing until just combined.
  5. Preheat oven to 325°F (160°C) and prepare a round cake pan.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 1 to 1.5 hours until a skewer comes out clean.
  8. Let the cake cool in the pan for about 10 minutes.
