Ingredients
  

For the Tofu Filling
  • 1 block Firm tofu Slice into thick slabs
  • 2 tablespoons Soy sauce Consider tamari for gluten-free
  • 1 teaspoon Garlic powder Fresh minced garlic works too
  • 1 teaspoon Smoked paprika
For the Vegetables
  • 2 cups Fresh spinach Can swap with arugula
  • 2 medium Sliced tomatoes
  • 1 medium Avocado Sliced
For the Spread
  • 1/2 cup Hummus
  • 2 tablespoons Mustard Dijon or whole grain recommended

Method
 

Prepare the Tofu
  1. Slice firm tofu into thick slabs, about 1/2 inch each. Press them gently between paper towels to release excess moisture.
Marinate
  1. Whisk together soy sauce, garlic powder, and a splash of sesame oil in a bowl. Add the tofu slices and let them marinate for at least 20 minutes.
Cook the Tofu
  1. Heat a skillet over medium heat and add a drizzle of oil. Cook the marinated tofu for about 4-5 minutes on each side until golden brown and crispy.
Toast the Bread
  1. While the tofu cooks, pop your favorite bread into the toaster or grill until golden and crispy.
Assemble the Sandwich
  1. Layer the crispy tofu on one slice of toasted bread. Add fresh greens, sliced tomatoes, and avocado.
Spread and Top
  1. Spread your favorite sauce or condiment on the other slice of bread, such as vegan mayo or hummus. Close your sandwich with a gentle press.
