Cream Cheese Filling Preparation
- In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth.
Cookie Dough Preparation
- Drop by 1 ½ teaspoon spoonfuls onto a lined baking sheet and freeze while preparing the cookie dough.
- In a small mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until combined.
- Beat in the egg, egg yolk, vanilla, and strawberry extract until evenly incorporated.
- Turn the mixer to low and add the flour mixture, mixing until just combined.
- Fold in the white chocolate chips and freeze dried strawberries until evenly incorporated. Add food coloring if desired.
- Scoop the dough into ¼ cup portions, flatten into circles, and place a cream cheese center in the middle.
- Form the dough into a ball around the cream cheese center.
- Space the cookies 2 inches apart on prepared baking sheets and chill for 1 hour.
Baking
- Preheat oven to 375°F (190°C) and prepare baking sheets with parchment paper.
- Bake for 10-12 minutes until the edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
