Ingredients
  

Vegetables
  • 2 cups cucumber diced
  • 2 cups tomatoes diced
  • 1 cup red onion thinly sliced
  • 1 cup bell pepper diced
Other Ingredients
  • 1 cup kalamata olives pitted
  • 1 cup feta cheese crumbled
  • 1 tablespoon fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. Dice the cucumber and tomatoes, thinly slice the red onion, and dice the bell pepper.
Combine Ingredients
  1. In a large mixing bowl, combine the diced cucumber, tomatoes, red onion, bell pepper, kalamata olives, and crumbled feta cheese.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Dress the Salad
  1. Pour the dressing over the salad and toss gently to combine. Garnish with chopped parsley.
