Ingredients
  

Base Ingredients
  • 1/2 tablespoon olive oil
  • 1 pound peeled shrimp
  • 2 tablespoons ghee or butter
  • 2 tablespoons arrowroot powder
  • 4 cloves garlic, minced
  • 1 each onion, finely diced
  • 1 cup celery, finely diced
  • 1 each green bell pepper, finely diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup diced tomatoes
  • 2 tablespoons cajun seasoning
  • 1 1/2 cups chicken stock
  • 1 tablespoon chopped parsley or green onions
Cajun Seasoning
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon thyme

Method
 

Cooking Steps
  1. Heat the olive oil in a skillet on medium high heat and once hot, add in the shrimp and sear for 2 minutes per side until pink. Once cooked, set the shrimp aside on a plate.
  2. Add the ghee to the pan and once melted, add in the arrowroot powder and stir to ensure there are no clumps. Once a thick paste forms, add in the diced green bell pepper, onion, celery, garlic, salt, and pepper and sauté for 4 minutes until they begin to soften.
  3. Add in the chopped tomatoes, Cajun seasoning, and chicken stock. Leave it to simmer for 10 minutes until the sauce has reduced to a thick consistency.
  4. Add the shrimp back to the pan and leave them to cook for 2-3 minutes until heated through. Serve the etouffee on cauliflower rice and garnish with fresh chopped parsley.
