Ingredients
  

Meat and Base
  • 10 oz pasta
  • 1 lb lean ground beef
  • 1 lb ground pork
Vegetables
  • 1.5 cups celery finely chopped
  • 1.5 cups carrot finely chopped
  • 1.5 cups onion finely chopped
Liquids and Seasonings
  • 2 680g passata tomato puree
  • 1 cup white wine
  • 4 tablespoons tomato paste
  • 1 tablespoon oregano
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 in parmesan rind
  • ¼ cup half and half
Herbs
  • 4 sprigs rosemary bouquet garni
  • 4 sprigs thyme bouquet garni
Garnish
  • parsley for garnish

Method
 

Cooking Steps
  1. Finely chop the celery, carrot, and onion.
  2. In a large Dutch oven, heat some olive oil over medium-high heat. Add the ground beef and ground pork. Break up the meat with a spoon and cook until nicely browned, about 8-10 minutes.
  3. Add the chopped celery, carrot, and onion. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  4. Pour in the white wine to deglaze the pan, scraping up any browned bits. Let the wine simmer until it reduces by half, about 3-5 minutes.
  5. Stir in the tomato paste and let it cook for another 3 minutes.
  6. Stir in the passata until well combined with the meat and vegetables.
  7. Add oregano, salt, and black pepper. Stir to incorporate the seasonings evenly.
  8. Place the bouquet garni (rosemary and thyme) and the Parmesan rind into the Dutch oven.
  9. Reduce the heat to low and let the ragu simmer gently, uncovered, for at least 1 hour, stirring occasionally.
  10. Once the ragu has thickened, remove the bouquet garni and Parmesan rind. Check the seasoning and add more salt if needed.
  11. Stir in the half and half and let it simmer for an additional 5 minutes.
  12. Serve over your favorite pasta, garnished with freshly grated Parmesan cheese and chopped parsley.
