Ingredients
  

For the Salad
  • 2 cups cooked chicken breast shredded or diced
  • 1 head romaine lettuce crisp and refreshing
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 medium avocado sliced
For the Dressing
  • 1/4 cup olive oil base for dressing
  • 2 tablespoons lime juice adjust for tartness
  • 1 teaspoon cumin for flavor
  • 1 teaspoon chili powder adjust to taste
  • to taste salt for flavor
  • to taste pepper for flavor

Method
 

Preparation
  1. Marinate 2 cups of diced chicken breast in lime juice, cumin, and chili powder for about 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes until golden brown and fully cooked.
  3. Chop up your favorite salad veggies—bell peppers, red onion, and cherry tomatoes.
  4. In a small bowl, whisk together olive oil, lime juice, and a pinch of salt.
  5. In a large bowl, combine the chopped veggies and cooked chicken. Drizzle with dressing and toss gently.
  6. Serve in bowls or plates, optionally topping with avocado slices.
