Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken thighs
Teriyaki Sauce
  • 1/2 cup teriyaki sauce store-bought or homemade
Rice
  • 2 cups uncooked jasmine rice
Vegetables
  • 1 cup broccoli florets
  • 1 cup carrot, julienned
  • 1 cup snap peas
Garnish
  • 2 tablespoons sesame seeds toasted
  • 2 tablespoons green onions, sliced

Method
 

Cook Rice
  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions.
Prepare Chicken
  1. Heat a skillet over medium heat. Add the chicken thighs and cook for about 5-7 minutes on each side until browned and cooked through.
  2. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
Cook Vegetables
  1. In the same skillet, add a splash of water and the broccoli, carrots, and snap peas. Cover and steam for about 3-4 minutes until tender.
Combine and Serve
  1. Return the sliced chicken to the skillet, pour in the teriyaki sauce, and stir to coat. Cook for an additional 2-3 minutes until heated through.
  2. To serve, place a scoop of rice in a bowl, top with the teriyaki chicken and vegetables, and garnish with sesame seeds and green onions.

Feel free to customize the vegetables based on your preference. You can also use chicken breast instead of thighs for a leaner option.
