Ingredients
  

Meatball Ingredients
  • 1 lb lean ground beef at least 80%
  • 1/2 cup plain panko crispy bread crumbs Progresso™
  • 1/3 cup milk
  • 1 large egg slightly beaten
  • 1 tbsp Montreal steak grill seasoning
  • 1 tbsp soy sauce
Sauce Ingredients
  • 2 tbsp butter melted
  • 1 tbsp organic tomato paste Muir Glen™
  • 1/2 tsp salt
  • 2 cups thinly sliced onions
  • 8 oz thinly sliced mushrooms about 3 cups
  • 1 cup beef flavored broth Progresso™, from 32-oz carton
  • 2 tbsp cornstarch
  • 2 tbsp cold water
Serve With
  • 1 pouch creamy butter mashed potatoes Betty Crocker™, made as directed on pouch
  • 2 tbsp chopped fresh Italian parsley leaves

Method
 

Prepare the Slow Cooker
  1. Spray the slow cooker with cooking spray. Mix melted butter, tomato paste, and salt in the slow cooker. Add onions and mushrooms, then toss to coat. Stir in the beef broth.
  2. In a large bowl, mix ground beef, panko bread crumbs, milk, egg, grill seasoning, and soy sauce. Shape into about 24 meatballs, approximately 1 1/2 inches each.
  3. Place meatballs on top of the vegetable mixture in the slow cooker.
  4. Cover and cook on Low heat for 3 to 4 hours or until the meatballs are thoroughly cooked (165°F). Stir the mixture.
  5. In a small bowl, mix cornstarch with cold water until smooth. Quickly stir this into the slow cooker, cover, and increase heat to High. Cook for 5 to 10 minutes until thickened.
  6. Serve over the creamy butter mashed potatoes and sprinkle with parsley.

Notes
