Prepare the Slow Cooker
- Spray the slow cooker with cooking spray. Mix melted butter, tomato paste, and salt in the slow cooker. Add onions and mushrooms, then toss to coat. Stir in the beef broth.
- In a large bowl, mix ground beef, panko bread crumbs, milk, egg, grill seasoning, and soy sauce. Shape into about 24 meatballs, approximately 1 1/2 inches each.
- Place meatballs on top of the vegetable mixture in the slow cooker.
- Cover and cook on Low heat for 3 to 4 hours or until the meatballs are thoroughly cooked (165°F). Stir the mixture.
- In a small bowl, mix cornstarch with cold water until smooth. Quickly stir this into the slow cooker, cover, and increase heat to High. Cook for 5 to 10 minutes until thickened.
- Serve over the creamy butter mashed potatoes and sprinkle with parsley.

Notes
Feel free to swap ground beef for turkey or use gluten-free breadcrumbs. Adding garlic powder or Worcestershire sauce can enhance the flavor.
