Ingredients
  

Casserole Base
  • 12 pieces taquitos store-bought or homemade
  • 2 cups enchilada sauce red or green sauce
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for topping
Optional Toppings
  • 1/2 cup chopped green onions for garnish
  • 1/4 cup sliced black olives for garnish
  • 1/4 cup fresh cilantro for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, spread a thin layer of enchilada sauce on the bottom.
  3. Arrange the taquitos in a single layer over the sauce.
  4. Pour the remaining enchilada sauce over the taquitos, ensuring they are well coated.
  5. Sprinkle the shredded cheese evenly over the top.
  6. Cover the baking dish with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
  9. Top with sour cream and optional toppings before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the cooking time if baking from cold.
