Tacos al Pastor

Tacos al Pastor are a popular Mexican dish made with marinated pork, pineapple, and fresh toppings, served in soft corn tortillas.

Ingredients
  

Marinade
  • 2 lbs pork shoulder thinly sliced
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 3 tbsp achiote paste
  • 2 cloves garlic minced
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup pineapple diced, for grilling
Taco Assembly
  • 8 small corn tortillas
  • 1 cup cilantro chopped
  • 1 medium onion diced
  • 1 medium lime cut into wedges
  • 1 cup salsa optional

Method
 

Marinate the Pork
  1. In a blender, combine orange juice, pineapple juice, achiote paste, garlic, cumin, oregano, salt, and pepper. Blend until smooth.
  2. In a bowl, combine the sliced pork with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Grill the Pork
  1. Preheat the grill to medium-high heat. Thread the marinated pork onto skewers.
  2. Grill the pork for about 10-15 minutes, turning occasionally, until cooked through and slightly charred.
  3. Add the diced pineapple to the grill for the last 5 minutes until caramelized.
Assemble the Tacos
  1. Warm the corn tortillas on the grill or in a tortilla warmer.
  2. Remove the pork from the skewers and chop into bite-sized pieces.
  3. To assemble, place the pork and grilled pineapple on each tortilla, and top with cilantro, onion, and a squeeze of lime. Serve with salsa if desired.

Notes

For an authentic taste, let the pork marinate overnight. Adjust the spice level by adding chili peppers to the marinade if desired.
