  • 3 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1.5 teaspoons kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons sumac
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • chopped cilantro for garnish
  • cotija cheese for garnish
Chipotle Sauce
  • 2/3 cup Greek yogurt or skyr
  • 2 tablespoons mayonnaise
  • 2 chipotle peppers in adobo
  • 1 teaspoon chili powder
  • 1 clove garlic
  • 1.5 tablespoons honey
  • 1 tablespoon olive oil
  • kosher salt to taste

Method
 

Cooking Steps
  1. Preheat an oven to 425 F.
  2. Toss the sweet potatoes with the olive oil, spices, and salt until well coated. Lay the sweet potato fries on a baking sheet in an even layer.
  3. Bake for 12 minutes, flip, and bake for another 12-15 minutes until the fries are blistered and cooked through. Remove from the oven and sprinkle with chopped cilantro and cotija.
  4. Combine all the ingredients for the chipotle sauce in a small food processor and blend until smooth. Season to taste with salt and pepper.
