For the Sweet Glaze
  • 1 cup powdered sugar sift before mixing
  • 2 tablespoons milk or cream adjust for consistency
  • 1 teaspoon vanilla extract can substitute with almond extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it lightly or lining it with parchment paper.
Mixing
  1. Mix the dry ingredients together in a large bowl: flour, baking powder, salt, and sugar.
  2. Combine the wet ingredients in another bowl: eggs, vegetable oil, vanilla extract, and mashed strawberries.
  3. Fold the wet mixture into the dry ingredients gently until just combined.
Baking
  1. Pour the batter into your prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  3. Cool the bread in the pan for about 10 minutes before transferring to a wire rack.
Glazing
  1. Whisk together powdered sugar and milk in a small bowl until smooth and pourable.
  2. Drizzle the sweet glaze over the cooled bread.
