  • 4 cups beef broth Homemade or low-sodium broth enhances flavor.
  • 1 cup dark ale A robust beer like stout or porter deepens the soup's richness.
  • 1 tablespoon Worcestershire sauce Soy sauce can be used as a substitute.
  • 1 teaspoon thyme (dried) Fresh thyme works too, but increase to 1 tablespoon.
  • Salt and pepper Always season at the end to adjust flavors perfectly.
For Garnishing
  • Fresh parsley (chopped) Omit if you're not a fan of green garnishes.
  • Crusty bread slices Try baguette or sourdough for variety.

Cooking Steps
  1. Sauté the onions and garlic in a large pot over medium heat until fragrant and translucent, about 5 minutes.
  2. Add the mushrooms, cooking until they are browned and tender, approximately 8 minutes.
  3. Brown the steak pieces in the pot, stirring occasionally for about 7-10 minutes.
  4. Pour in your ale, scraping up any browned bits from the bottom of the pot. Let it simmer for 5 minutes.
  5. Mix in the broth, carrots, and herbs, then bring the mixture to a gentle boil. Reduce heat and allow it to simmer uncovered for 30-40 minutes.
  6. Season with salt and pepper to taste just before serving.
