  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon turmeric
  • 1 teaspoon chili flakes adjust to taste
  • 1 can (14 oz) coconut milk
  • 1 tablespoon tomato paste
  • salt and pepper to taste
  • 1 tablespoon freshly squeezed lime juice
  • fresh cilantro, chopped for garnish
  • cooked rice for serving

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the garlic and cook for another minute until fragrant.
  2. Toss in the red and yellow bell peppers. Sauté for about 5 minutes until they soften slightly.
  3. Add the chicken pieces to the pan, along with paprika, cumin, turmeric, chili flakes, salt, and pepper. Stir well and let the chicken sear for 4-5 minutes until it starts to brown.
  4. Stir in the tomato paste and pour in the coconut milk. Bring to a gentle simmer, then reduce heat to low. Let it cook uncovered for about 20-25 minutes, stirring occasionally, until the chicken is fully cooked and the sauce has thickened slightly.
  5. Just before serving, squeeze in fresh lime juice and give it a final stir. Garnish with chopped cilantro.
  6. Spoon the chicken and sauce over fluffy white rice.

Notes
