Sourdough Hamburger Buns

Ingredients
  

Dough
  • 500 g bread flour high protein content
  • 200 g sourdough starter active and bubbly
  • 300 ml water room temperature
  • 10 g salt fine sea salt
  • 10 g sugar to enhance browning
  • 30 g unsalted butter softened
Toppings
  • 1 egg egg wash beaten for brushing
  • 2 tbsp sesame seeds optional, for topping

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the bread flour, sourdough starter, water, salt, and sugar. Mix until a shaggy dough forms.
  2. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  3. Incorporate the softened butter and knead until fully integrated.
  4. Place the dough in a lightly greased bowl, cover, and let it rise at room temperature for 4-6 hours or until doubled in size.
Shape and Bake
  1. Once the dough has risen, punch it down and divide it into 4 equal pieces.
  2. Shape each piece into a round bun and place them on a baking sheet lined with parchment paper.
  3. Cover the buns with a kitchen towel and let them rise for another 1-2 hours until puffy.
  4. Preheat the oven to 375°F (190°C). Brush the tops of the buns with the beaten egg and sprinkle with sesame seeds if desired.
  5. Bake for 20 minutes or until golden brown. Let cool on a wire rack before serving.

Notes

For best results, use an active sourdough starter. These buns can be frozen after baking for later use.
