Ingredients
  

Main Dishes
  • 2 lbs Collard greens washed and chopped
  • 1 lb Smoked turkey leg for flavoring
  • 1 cup Cornmeal for cornbread
  • 1 cup Buttermilk for cornbread
  • 2 large Eggs for cornbread
  • 1 tbsp Baking powder for cornbread
  • 1 tbsp Sugar for cornbread
  • 1 tbsp Salt for cornbread
  • 1 cup Chicken broth for collard greens
Sides
  • 4 ears Corn on the cob fresh
  • 2 cups Macaroni for macaroni and cheese
  • 2 cups Cheddar cheese shredded
  • 1 cup Milk for macaroni and cheese
  • 1 tbsp Butter for macaroni and cheese

Method
 

Prepare Collard Greens
  1. In a large pot, add the smoked turkey leg and chicken broth. Bring to a boil.
  2. Add the collard greens and simmer for about 1 hour until tender.
Make Cornbread
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine cornmeal, baking powder, sugar, and salt.
  3. In another bowl, whisk together buttermilk and eggs. Add to dry ingredients and mix well.
  4. Pour the batter into a greased baking dish and bake for 20-25 minutes.
Prepare Macaroni and Cheese
  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a skillet, melt butter, then add milk and cheese. Stir until cheese is melted.
  3. Combine macaroni with cheese sauce and mix well. Bake in a dish for 15 minutes.
Cook Corn
  1. Boil corn on the cob in salted water for about 10 minutes until tender.
