S’mores Cookies

Delicious S’mores Cookies combine chocolate, marshmallows, and graham crackers in a delightful treat.

Ingredients
  

  • 11 Tablespoons unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon optional
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 3 Hershey's bars broken into pieces
  • 2-3 packages graham crackers broken into squares

Method
 

  1. Preheat the oven to 375 degrees. Line a large sheet pan with parchment paper.
  2. In the bowl of an electric mixer, cream the butter with the white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.
  3. In a medium bowl, whisk together the flour, baking soda, sea salt, and cinnamon (if using) to combine. Set aside.
  4. Add the flour mixture to the butter mixture and combine on low speed.
  5. Fold in the chocolate chips and marshmallows.
  6. Lay out graham cracker squares side by side on the pans as close as possible. You may need to adjust the number of graham crackers used.
  7. Place 1 1/2 tablespoons of dough on each graham cracker square, about 1 – 1 ½ inches apart. Press 1-2 mini marshmallows on top of the dough balls for extra s'mores look.
  8. Bake for 9-12 minutes until the edges turn golden brown. Remove to a wire rack to cool.
  9. After 2-3 minutes of cooling, press the Hershey’s bar pieces on top. Optionally, sprinkle with flaky salt. Cut cookies once they are completely cool.

Notes

Feel free to customize by using dark chocolate or adding nuts. Store cookies in an airtight container for up to a week.
