Ingredients
  

Gnocchi
  • 1 pound potato gnocchi store-bought or homemade
Sauce
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup fresh spinach chopped
  • 1 cup smoked salmon sliced
  • 1 tablespoon dill fresh or dried
  • 1 teaspoon lemon zest
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
Make the Sauce
  1. In a skillet, heat olive oil over medium heat. Add the heavy cream and bring to a simmer.
  2. Stir in the chopped spinach, smoked salmon, dill, lemon zest, salt, and pepper. Cook for 3-5 minutes until the spinach is wilted and the sauce is heated through.
Combine and Serve
  1. Add the cooked gnocchi to the skillet and gently toss to coat in the sauce. Serve immediately, garnished with additional dill if desired.

Notes

For a lighter version, you can substitute half-and-half for the heavy cream.
