Ingredients
  

Shrimp and Vegetables
  • 1 pound shrimp, peeled and deveined large shrimp recommended
  • 2 cups broccoli florets
  • 1 cup bell pepper, sliced any color
  • 1 cup carrots, julienned
  • 2 tablespoons olive oil for sautéing
Sauce
  • 3 tablespoons soy sauce low sodium preferred
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil for flavor
Garnish
  • 2 tablespoons green onions, sliced for topping
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Sauce
  1. In a small bowl, whisk together soy sauce, honey, ginger, garlic, and sesame oil. Set aside.
Cook the Shrimp and Vegetables
  1. Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes until pink.
  2. Add broccoli, bell pepper, and carrots to the skillet. Sauté for an additional 5-7 minutes until vegetables are tender.
  3. Pour the sauce over the shrimp and vegetables, stirring to coat evenly. Cook for another 2 minutes.
Serve
  1. Divide the shrimp and vegetable mixture into bowls. Garnish with green onions and sesame seeds if desired.
