Ingredients
  

Chicken Filling
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth low sodium
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream optional
  • 1/4 cup fresh cilantro chopped, optional

Method
 

Prepare Chicken
  1. Place the chicken breasts in a slow cooker and add chicken broth, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and easily shreds with a fork.
  3. Once cooked, shred the chicken using two forks and mix it with the cooking juices.
Assemble Tacos
  1. Warm the corn tortillas in a skillet over medium heat until pliable.
  2. Fill each tortilla with shredded chicken, then top with lettuce, tomatoes, cheese, sour cream, and cilantro as desired.
  3. Serve immediately and enjoy!
