Ingredients

For the Main Dish
  • 2 lbs lamb shoulder (cut into chunks) Beef can be used if preferred.
  • 1 tablespoon vegetable oil Olive oil can be used for added flavor.
  • 2 large onions (chopped) Shallots can be a substitute.
  • 4 cloves garlic (minced) Use 1 teaspoon garlic powder if fresh isn't available.
  • 2 cups beef stock Low-sodium is recommended; chicken stock is an alternative.
  • 1 tablespoon fresh rosemary (chopped) Dried rosemary can also work but use less.
For the Side Dishes
  • 4 cups potatoes (peeled and diced) Yukon Golds are ideal for creaminess.
  • 1 cup milk Whole milk gives a rich texture; cream can be used for silkiness.
  • 4 tablespoons butter Vegan butter is a good substitute.
For Garnish
  • 1/4 cup fresh parsley (chopped) Skip if you’re not a fan of herbs.
  • Salt and pepper to taste Use freshly cracked black pepper for more intensity.

Method

Preparation
  1. Gather your ingredients, ensuring you have everything needed for a cozy Scottish dinner.
Sauté the Aromatics
  1. Heat a splash of oil in a large pot over medium heat. Add diced onions and garlic, sautéing until they’re soft and golden, about 5-7 minutes.
Brown the Meat
  1. Add the meat to the pot and cook until browned on all sides, stirring occasionally for about 8-10 minutes.
Add the Vegetables
  1. Toss in chopped potatoes and any other veggies you love. Stir them in with the meat for another 5 minutes until they start to soften.
Pour in the Broth
  1. Slowly add stock or broth, bringing everything to a gentle simmer. Let it bubble away for 30-40 minutes or until your vegetables are tender.
Season Generously
  1. Taste your dish and season with salt, pepper, and perhaps a pinch of nutmeg for that classic Scottish touch.
