- Preheat oven to 400°F. Peel and dice sweet potatoes into 1 inch cubes.
- Place potato chunks in a 9 x 13" casserole dish. Drizzle with olive oil and sprinkle with seasonings, then stir well to coat. Bake potato cubes for 30 minutes.
- Meanwhile, place a large skillet on medium-high heat and add ground turkey. Break apart with a spoon and stir until completely browned.
- Add diced onion to the browned turkey meat and sauté for 3-5 minutes until soft and translucent.
- Remove casserole dish from the oven after 30 minutes have passed. Add broth, milk, uncooked rice, and sautéed turkey/onion mixture. Stir well and bake uncovered for 15 minutes.
- After 15 minutes, cover casserole with shredded cheese. Return to the oven for about 10 more minutes.
- Allow casserole to rest and cool for 10-15 minutes. Add parsley flakes, plate and enjoy!
