Ingredients
  

Mixed Green Salad
  • 8 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red onion thinly sliced
  • 1 cup feta cheese crumbled
  • 1 cup olive oil for dressing
  • 1 cup balsamic vinegar for dressing
Pasta Salad
  • 1 pound pasta cooked and cooled
  • 1 cup bell peppers diced
  • 1 cup black olives sliced
  • 1 cup parmesan cheese grated
  • 1 cup Italian dressing to taste
Quinoa Salad
  • 2 cups quinoa cooked and cooled
  • 1 cup corn cooked
  • 1 cup black beans rinsed and drained
  • 1 cup cilantro chopped
  • 1 cup lime juice for dressing

Method
 

Prepare Mixed Green Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, carrots, red onion, and feta cheese.
  2. In a separate bowl, whisk together olive oil and balsamic vinegar. Drizzle over salad and toss to combine.
Prepare Pasta Salad
  1. In a large bowl, mix cooked pasta, bell peppers, black olives, and parmesan cheese.
  2. Pour Italian dressing over the salad and toss until well coated.
Prepare Quinoa Salad
  1. In a large bowl, combine cooked quinoa, corn, black beans, and cilantro.
  2. Add lime juice and mix well to combine.
