Ingredients
  

Jalapeño Filling
  • 8 pieces jalapeños
  • 16 oz cream cheese
  • 1 lb bacon cooked crispy
Sandwich Components
  • 8 slices Monterey Jack cheese
  • 8 slices cheddar cheese
  • 4 slices Texas toast or Sourdough bread
  • mayo to spread on bread for toasting

Method
 

Cooking Steps
  1. Preheat the oven to 375 degrees and stuff the jalapeños with cream cheese. Bake for 25 minutes.
  2. Remove from oven, let cool for a few minutes, then chop the stuffed jalapeños while keeping them together.
  3. Spread mayo on one side of a slice of bread and place it side down in a pan.
  4. Top with a slice of Monterey Jack and cheddar cheese followed by 2 tablespoons of chopped stuffed jalapeños.
  5. Place another slice of bread on top and spread mayo on top before flipping.
  6. Grill on each side until the cheese is melted and the bread is golden brown.
  7. Repeat for each sandwich and enjoy.
