Ingredients
  

Vegetables
  • 2 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced yellow bell pepper
  • 1/2 cup chopped fresh parsley
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, purple cabbage, shredded carrots, red bell pepper, yellow bell pepper, and parsley.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until all the vegetables are evenly coated. Serve immediately or refrigerate for up to an hour before serving to allow flavors to meld.
