Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 1-2 medium cucumber diced
  • 1 cup feta cheese crumbled
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh mint finely chopped
  • 1 cup cherry tomatoes halved
  • 1/4 medium red onion finely diced
  • 2 tablespoons olive oil extra virgin
  • 1 tablespoon lemon juice fresh-squeezed
For the Dressing
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly cracked

Method
 

Preparation
  1. Rinse your quinoa under cold water for about 2 minutes to remove its natural bitterness.
  2. Cook the quinoa by bringing 2 cups of water to a boil in a medium saucepan. Add the rinsed quinoa, reduce heat, and simmer for 15 minutes or until the water is absorbed and the quinoa is fluffy.
  3. Chop your cucumbers and herbs while the quinoa cooks. Dice 1-2 medium cucumbers and finely chop a handful of fresh dill and mint.
  4. Combine the cooked quinoa with chopped cucumbers, feta cheese, dill, and mint in a large mixing bowl. Toss gently to mix all the ingredients together without breaking up the feta too much.
  5. Dress your salad with olive oil, lemon juice, salt, and pepper to taste.
  6. Chill your salad in the refrigerator for at least 30 minutes before serving.
