Ingredients
  

For the Salad
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
  • 2 cups cucumbers chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh dill chopped
  • 1/4 cup fresh mint chopped
  • 1 cup cherry tomatoes halved
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Rinse the quinoa thoroughly under cold water for about 2 minutes.
  2. Cook the quinoa in a medium saucepan by adding 1 cup of rinsed quinoa to 2 cups of boiling water. Cover and simmer for 15 minutes until all water is absorbed and the quinoa is fluffy.
  3. Chop the cucumbers, mint, and dill while the quinoa cools.
  4. Combine the cooled quinoa, cucumbers, feta, dill, and mint in a large mixing bowl. Gently toss everything together until well mixed.
  5. Dress your salad by drizzling with olive oil and a splash of lemon juice. Stir gently to coat all ingredients evenly.
  6. Chill your salad in the refrigerator for at least 30 minutes before serving.
