  • 1 teaspoon Salt Kosher salt works wonderfully here.
For the Radishes
  • 1 bunch Radishes Fresh, crisp radishes are key.
  • 2 cloves Garlic cloves Consider using whole cloves for a milder taste.
  • 1 teaspoon Red pepper flakes Adjust based on your spice tolerance.

Preparation
  1. Wash and trim the radishes. Slice them thinly—about 1/8 inch.
  2. In a medium saucepan, mix vinegar, water, sugar, and salt. Heat over medium until dissolved, then bring to a gentle simmer for about 5 minutes.
  3. Place the sliced radishes in a clean glass jar. You can layer them with spices like peppercorns or garlic.
  4. Carefully pour the hot brine over the radishes until they’re fully submerged.
  5. Let the jar cool to room temperature before sealing it with a lid. Once cooled, refrigerate for at least an hour.
