Ingredients
  

  • 8 oz block feta cheese, drained from brine around 220 grams
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree unsweetened
  • 1-2 Tbsp honey
  • 1 tsp dried thyme
  • black pepper to taste
  • fresh thyme for garnish
  • chopped walnuts optional
  • extra honey drizzle, for serving
  • crusty, toasted bread for serving
  • crackers for serving

Method
 

Preparation Steps
  1. Make whipped feta by adding feta cheese and Greek yogurt to a food processor. Blend until smooth, scraping down with a spatula as needed.
  2. Add pumpkin puree, 1 or 2 tablespoons of honey, thyme, and black pepper to the food processor. Blend until fully combined.
  3. Transfer whipped feta to the fridge and chill (covered) for 30-60 minutes.
  4. Once ready to serve, transfer whipped feta to a large bowl and garnish with chopped walnuts, fresh thyme, extra honey, and more pepper.
  5. Serve with crusty toasted bread or crackers for dipping.
