Ingredients
  

  • 6 large eggs hard boiled
  • ¼ cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 1 drop red food coloring optional
  • salt to taste
  • pepper to taste
  • fresh chives cut into small pieces
  • smoked paprika for garnish

Method
 

  1. Peel the hard boiled eggs, slice them in half, and scoop the yolks into a small mixing bowl. Set the egg white halves onto a platter.
  2. Mash the egg yolks with a fork.
  3. Add the mayonnaise, mustard, vinegar, salt and pepper to the bowl, and stir to combine until smooth. Optional – if you'd like the mixture to be more orange than yellow, add one drop of red food coloring and mix.
  4. Add the egg yolk mixture to a piping bag with the piping tip of your choice.
  5. Pipe the yolk filling into the egg white halves to form circles for the pumpkins.
  6. Use a toothpick to lightly draw lines into the 'pumpkins'.
  7. Slice a few chives into ¼-½ inch pieces.
  8. Place the chive pieces onto your egg pumpkins as stems.
  9. Sprinkle with paprika.
  10. Chill in the refrigerator in an airtight container until ready to serve.
