  • 2 cans tuna drained
  • 1 can garbanzo beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the drained tuna, garbanzo beans, cherry tomatoes, cucumber, red onion, and parsley.
  2. In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
