Ingredients
  

  • 1 can low-fat cream of chicken soup 284 mL
  • 1 can 1% milk
  • 3/4 cup uncooked long-grain white rice 175 mL
  • 1 1/2 tsp chili powder
  • 1 1/2 cups sliced bell peppers and chopped onions mixed red and green
  • 1/2 cup frozen corn
  • 4 pieces skinless, boneless chicken breasts cut in half, about 1 lb/500 g
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey cheese

Method
 

  1. Mix the soup, milk, rice, and chili powder in a shallow baking dish.
  2. Spread the vegetable mixture evenly in the dish.
  3. Place the chicken on top and sprinkle with cheese and additional chili powder to taste. Cover the dish.
  4. Bake at 200 °C (400 °F) until the chicken is cooked and the rice is tender, about 45 minutes.
  5. Remove the cover and broil until the cheese is golden and bubbly, about 3 minutes.
  6. Before serving, remove the chicken and stir the rice.
