Ingredients
  

Cake Batter
  • 1 cup ricotta cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup pistachios chopped
  • 1 tablespoon orange zest
  • 1/4 cup orange juice
Topping
  • 1/4 cup powdered sugar for dusting
  • 1 tablespoon pistachios chopped, for garnish

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, whisk together the ricotta cheese and granulated sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped pistachios, orange zest, and orange juice.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Serve
  1. Once cooled, dust the top of the cake with powdered sugar and sprinkle with additional chopped pistachios before serving.
