  • 1 teaspoon cinnamon 2g
  • 1 teaspoon salt 6g
Wet Ingredients
  • 1 cup creamy peanut butter 256g
  • ¼ cup pure maple syrup 60ml
  • 2-3 medium bananas about ¾ cup mashed (180g)

  • ¾ cup chocolate chips 130g
  • ½ cup cashews roughly chopped (60g)

Method
 

Baking Instructions
  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. Mash bananas with a fork until smooth. Chop cashews into small, pebble-sized pieces.
  3. In a large mixing bowl, combine old-fashioned oats, cinnamon, and salt.
  4. Add creamy peanut butter, pure maple syrup, mashed bananas, chocolate chips, and cashews. Stir with a rubber spatula until fully combined.
  5. Use a large cookie scoop to portion out 12 equal-sized mounds of dough onto the prepared baking sheet.
  6. With damp hands, press each mound into a round, compact cookie shape.
  7. Bake for 22-25 minutes, or until the edges turn golden brown. Do not overbake.
  8. Let the cookies cool completely on the baking sheet before serving or storing.
