Ingredients
  

Fruit Filling
  • 3 pieces Peaches peeled and sliced
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Cornstarch
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
Crust & Topping
  • 1 cup All Purpose Flour
  • 1 cup Quick Oats
  • 1 teaspoon Baking Soda
  • 3/4 cup Unsalted Butter melted and cooled
  • 3/4 cup Brown Sugar
Cream Cheese Layer
  • 4 ounces Cream Cheese softened, full fat
  • 1/3 cup Powdered Sugar
  • 1 piece Egg beaten
  • 1/2 teaspoon Vanilla

Method
 

Preparation Steps
  1. Heat the oven to 350°F.
  2. Peel the peaches and chop into a bowl. Sprinkle with brown sugar and cornstarch, then gently fold together. Set aside.
  3. Spray an 8x8" or 9x9" baking dish or line with foil. In a bowl, combine salt, cinnamon, and flour.
  4. Add oats, baking soda, butter, and brown sugar, then stir until everything is moist.
  5. Press half of the mixture into the baking dish and bake for 8 minutes. Remove from oven and allow to cool for 10-15 minutes.
  6. In a medium bowl, using a hand mixer, combine cream cheese, powdered sugar, egg, and vanilla.
  7. Spread the cream cheese mixture over the crust and layer with peaches, leaving out excess juice.
  8. Sprinkle remaining crumble over the top and bake for an additional 25 minutes.
  9. Allow to cool completely or chill in the refrigerator for a few hours. Serve at room temperature or chilled.
