Ingredients
  

Pasta
  • 12 oz Pasta (e.g., fettuccine or penne) Use whole wheat or gluten-free if desired.
Vegetables
  • 1 cup Bell pepper, sliced Any color.
  • 1 cup Zucchini, sliced
  • 1 cup Carrots, julienned
  • 1 cup Cherry tomatoes, halved
  • 1 cup Broccoli florets
Sauce
  • 3 tbsp Olive oil Extra virgin for best flavor.
  • 2 cloves Garlic, minced
  • 1 tsp Salt To taste.
  • 1 tsp Black pepper Freshly ground.
  • 1/2 cup Parmesan cheese, grated Optional for serving.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. Add bell pepper, zucchini, carrots, and broccoli. Sauté for about 5-7 minutes until vegetables are tender but still crisp.
  3. Stir in cherry tomatoes and cook for an additional 2 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Season with salt and pepper, and toss to combine.
  2. Serve hot, topped with grated Parmesan cheese if desired.
