- Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper.
- Spread 1.5 cups shredded cheese into a thin, even layer on the parchment-lined baking sheet.
- Arrange the onion rings on top of the cheese in a single layer without overlapping.
- Sprinkle the remaining cheese on top of each onion ring to create a light crispy layer.
- Bake for 30-35 minutes, checking frequently after 20 minutes to prevent burning.
- Once most of the cheese is lightly golden, remove the baking pan from the oven but do not turn off the oven.
- Allow the chips to cool for about 5-10 minutes, then carefully flip the sheet of onion chips over.
- Return to the oven and bake for an additional 3-5 minutes to crisp up any sections of cheese that aren't fully golden brown.
- Remove chips from oven and let cool for about 10 minutes. Break into smaller pieces or cut into individual onion chips. Serve while warm.
