Ingredients
  

For the Pasta
  • 8 oz Penne pasta
  • 2 cups Chicken broth
  • 1 can Black beans drained and rinsed
For the Taco Flavor
  • 1 packet Taco seasoning homemade or store-bought
  • 1 can Diced tomatoes
For the Cheese Delight
  • 8 oz Cream cheese
  • 1 cup Shredded cheddar cheese
Optional Toppings
  • 1 cup Sour cream
  • 1 cup Chopped cilantro

Method
 

Cooking the Pasta
  1. Cook the ground beef in a large pot over medium heat for about 5-7 minutes, breaking it apart with a spatula until it's browned and no longer pink.
  2. Add the chopped onion and garlic, stirring them into the beef mixture for another 2-3 minutes until they soften and become fragrant.
  3. Incorporate taco seasoning, diced tomatoes, and chicken broth into the pot. Stir well to combine everything, letting the flavors meld together beautifully for about 1 minute.
  4. Stir in the pasta, ensuring it’s fully submerged in the liquid. Bring it to a gentle boil, then cover and reduce the heat to simmer for 10-12 minutes or until the pasta is cooked al dente.
  5. Once the pasta is cooked, remove from heat and stir in shredded cheese until it’s completely melted and creamy.
  6. Serve hot, garnishing with fresh cilantro or green onions for an extra pop of flavor and color.
