Ingredients
  

Dough Ingredients
  • 300 grams sourdough starter
  • 295-350 grams warm water Adjust according to dough consistency
  • 1 tablespoon vegetable oil
  • 1 tablespoon barley malt syrup or honey
  • 2.5 teaspoons fine sea salt
  • 3 cups all-purpose flour
  • 3 cups whole wheat flour
  • 1 tablespoon baking soda
  • 1/4 cup milk
Toppings
  • 1 teaspoon sesame seeds
  • 1 teaspoon poppy seeds
  • 1 teaspoon dried onions
  • 1 teaspoon dried garlic
  • 1 teaspoon coarse sea salt
  • 1 teaspoon Za’atar

Method
 

Bagel Preparation
  1. Mix the sourdough starter, 1 1/4 cup of warm water, vegetable oil, barley malt syrup, sea salt, and both flours together in a bowl.
  2. If necessary, add the remaining 1/4 cup of water to ensure all the flour is hydrated.
  3. Cover the bowl with a damp towel and let the dough sit for 10 minutes.
  4. Knead the dough for at least 7 minutes with a stand mixer or longer by hand until it is smooth but still stiff.
  5. Transfer the dough to a lightly oiled bowl and cover with a damp towel.
  6. Let the dough rise in a warm place for about 4 hours (5 hours if in a cold environment).
  7. Transfer the dough to the counter and divide into 14 pieces of approximately 100 grams each.
  8. Roll each piece into a ball and make a hole in the center with your finger, expanding the hole with your hands.
  9. Place the bagels on 2 baking sheets lined with parchment paper and cover with a damp towel. Let sit at room temperature for 1-2 hours.
  10. Preheat oven to 425°F.
  11. Bring a large pot of water to a boil and add baking soda.
  12. Boil the bagels in batches for about 20 seconds on each side.
  13. Remove the boiled bagels with a slotted spoon and place them on a baking sheet lined with parchment paper or a silicone mat.
  14. Brush the bagels with milk and sprinkle with seasoning of choice.
  15. Bake for about 10 minutes, rotate pans, and bake for another 5-15 minutes until bagels are a deep golden color.
  16. Let the bagels cool before serving.
