Ingredients
  

For the Batter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 1 cup milk can substitute with plant-based option
For the Fruit Mixture
  • 2 cups mixed dried fruits raisins, apricots, cherries
  • 1 cup nuts walnuts or almonds
  • 1 tsp spices cinnamon and nutmeg
For the Glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice or milk to thin out glaze

Method
 

Preparation
  1. Chop a mix of your favorite dried fruits and soak them in warm water or brandy for about 30 minutes until plump.
  2. In a large mixing bowl, beat together softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Crack in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, and spices. Sift to eliminate lumps.
  5. Gradually fold the dry ingredients into the butter mixture using a spatula.
  6. Gently stir in your soaked fruits along with any remaining soaking liquid.
  7. Grease and line your cake pan with parchment paper. Pour in the batter and smooth out the top.
  8. Preheat your oven to 350°F (175°C) and bake for about 50-60 minutes or until a toothpick inserted comes out clean.
  9. Let your cake cool in the pan for about 15 minutes before transferring to a wire rack.
